Alain Cavailles was born in the Limoux area but practiced accounting in Marseilles for 20 years before returning to his home in the rolling foothills of the Pyrenees. He makes the traditional Blanquette and Cremant wines from Limoux. In an area dominated by co-ops and mass producers, he is committed to remaining small and doing everything, from bottling to riddling, by hand.
Wheras Blanquette de Limoux is made mostly from Mauzac grapes, this Cremant is mostly Chardonnay.
