Atamisque's ultra premium wines are produced with grapes from low-yield vines up to 90 years old. The grapes are hand-harvested and undergo a double selection process at the winery's sorting tables. Atamisque uses only the best French new oak barrels (Demptos and Taransoud) for aging these wines. The Chardonnay is fermented and aged in oak for 10 months. The reds are fermented in stainless steel tanks and aged in oak for 14 months.
